New Restaurant for Hotel Derek Announced (finally)

Houston's Hotel Derek has finally announced who will take over operation of their in-house restaurant,
Bistro Moderne. Italian culinary legend Piero Selvaggio will open PS Valentino Vin Bar in the hotel this fall.

The new restaurant will feature two dining experiences - an intimate fine dining restaurant and a casual vin
bar. Houstonians will enjoy authentic yet inventive Italian dining in the restaurant and in the bar, a wide
selection of small plate dishes and an extensive list of wines by the glass. Selvaggio told me that he is
keeping the luscious chocolate leather chairs (yay) but is getting rid of the display kitchen in the dining room (boo).

The Valentino Restaurant Group is home to Valentino, the flagship restaurant founded in Santa Monica in
1972 by Piero Selvaggio. Following the success of the original Valentino Restaurant, Selvaggio opened
Valentino Las Vegas at the Venetian Hotel in 1999 and Giorgio in the Mandalay Bay Hotel in 2004. Selvaggio
is considered one of the modern fathers of Italian cuisine in America so it's pretty exciting that we are getting his restaurant at Hotel Derek this fall.

Valentino's executive chef and partner is Luciano Pellegrini, who was awarded 'Best Chef in the Southwest' by the James Beard Foundation in 2004. He will not be at the restaurant everyday. Selvaggio told me that a former chef from Houston's Ardocoro (just down the street from the Derek) will be doing the cooking everyday at Valentino Houston.
