Our family at Paulie's has been blessed with 11 great years of business.
This is a tough market to succeed in, and we are lucky to have found patrons who enjoy our food.
In the past, we were fortunate enough to expand to more than one location.
Each of those locations did well and closed on our terms. So now comes the shedding of the last clone.
Our Holcombe store will be closing today, Monday Feb. 16. We received an offer we couldn't refuse, and because this is a business first, we accepted. This takes us back to the one and only original Paulie's on Westheimer.
We are going back to one efficient location, still pumping out fresh food and delicious desserts.
I can assure you this location is not for sale, and we hope to be around as long as possible.
Now that we have one location to operate, this should give me time to work on a new concept I've had up my sleeve for a while. I have spent time in Italy and want to bring back some things I've learned recently combined with lessons from my Italian family.
I'm excited to work on something new and excited to get back to Westheimer at the same time, where I grew up.
Thank you Houston for all of the support. Without you we definitely couldn't be here today.
I'll keep you updated on the new concept. The location is crucial, so it could be awhile until I find her.
Until then, we will see you at Westheimer!
