Tony Vallone's New Chef - Francesco Casetta

Francesco Casetta is the new executive chef at Tony’s, Greenway Plaza, Houston. Born in Florence, Casetta is a graduate of the Culinary Institute of America, Hyde Park. His work experience includes: Café des Artistes, New York; the Four Seasons Palm Beach and Ritz Carlton Naples, Florida. He then went back to Italy to work for Dal Pescatore, a Michelin three star restaurant in Canneto sull’Oglio, and the five-star Hotel Savoy in Florence.

Vallone and Casetta didn't waste any time. New dishes are already appearing in the dining room. Excited about this new collaboration, Tony told me many more new dishes are planned.
 

"He's modern and I’m classic, so it should be a very good marriage,” Vallone said to me today.

“Francesco’s cooking is light, healthy and very tasty, with clean, clear flavors,” he added.

The boys should have some fun stirring the pot because they also are both sauciers.

Casetta is married and has two small children. In Houston for less than two weeks, he says his family loves it here already. I’m going to meet him later this week for a tasting and I will share the details with you.
