Alberto Baffoni is no longer the chef at Bohemia

I received an email today from Bohemia's owner to let me know that Alberto Baffoni was no longer the executive chef of Bohemia Restaurant (Wilcrest & Westheimer, Houston). She added, "None the less, we have retained our sous chef, Paulo Pineda, who has been working under Alberto for the better part of a decade. He is now our executive chef and he is excellent."

It is my opinion that Baffoni is a very talented chef. Our friend John Mariani of Esquire Magazine named Baffoni’s Simposio Restaurant at Chimney Rock and Richmond, one of "America’s Best New Restaurants" in 1998. But ever since the chef left Simposio (which now has new owners and has moved to a new location) he has traveled a little bit of a rocky path, working at a few restaurants here and there. We wish him much luck and anxiously look forward to his next endeavor.

    Hello Cleverley:

It is always great to read your website and blogs!

Thank you for your kind words above, it has been a rocky road. I had not found a place that I could have creative control and not compromise my cuisine. I am a Chef, and I think it is great that I have taught Paolo well enough that he can now be a Chef, however, as the previous post said, "Good cooks don't always make great Chefs."

I have a new venture! I have opened Provecho Catering. We are located at 1829 Colquitt St, and offer full service catering and food delivery. My food is now available without the hassle of coming into a restaurant! We bring it to you! Check out our website, at www.provechofood.com, and let me know when you can come by to see our kitchen, and taste our food...you are always welcome Cleverley!
