Farewell Note from Chef Philippe Schmit

I received this email from Philippe Schmit today. I am publishing it with his permission. Dear bistro moderne friends and family, I am saddened to say that my team and I will close our operation at bistro moderne on November 17th, 2007. The Hotel Derek has been sold and the new ownership will implement a new concept in the hotel including the Restaurant. Since I moved to Houston 3 years ago I’ve have the fortune to meet so many wonderful people like you that Houston has become home for me. I wanted to take this opportunity to thank you all for your unconditional support and friendship to bistro moderne throughout the last 3 years. Probably you have already heard about the closing and I wanted for you to hear it from me. As of today I haven’t have the time to make plans for me after November 17th, but I can assure you that the only plan I have so far is to stay in Houston due to my love to the city. I will love to see you one more time at bistro moderne which is the place where I have put my heart and soul for the past 3 years. I will keep you informed of my new endeavors and hoping to see you again in the near future. Ciao, |
