Chef Alberto Baffoni Is Coming Back




Yea! We will be able to enjoy the cooking of Chef Alberto Baffoni again very soon. He's been MIA for quite a while. 

You may remember the adorable Italian chef and restaurateur from Simposio, his restaurant at Richmond and Chimney Rock in Houston. In 1998 John Mariani, Esquire magazine, named Simposio one of the best new restaurants in America. That's quite a feat for a little restaurant in Houston.

One of Alberto's jobs after he left Simposio was executive chef for the Rainbow Lodge (As I reported in Cleverley's Newsletter, June 2006.) That was fairly short-lived, and then I lost track of him until now. 

I have been hearing rumors about his return for a while and finally had a moment to investigate. I found out that he will be the executive chef at a new restaurant called Bohemia Restaurant & Bar, 10850 Westheimer at Wilcrest. (In the retail center where 3 Olives and Pappa La Rosa used to be.)

When I entered Bohemia on Monday, (the space is under renovation) I was greeted by Laura Papkov. I know Laura from the Russian Bear, where she was part owner and a popular entertainer. She has left the Russian Bear and is now creating Bohemia. It should be open in about 5 weeks, she said. The menu will feature dishes from European countries including Italy and France. There will be live music and, yes, she will again entertain. Alberto will have no ownership in Bohemia and will be able to concentrate on what he does best: COOK!

She added, "None the less, we have retained our sous chef, who has been working under Alberto for the better part of a decade. He is now our executive chef."
